My only problem with sourdough is making it fast enough to deal with the family. I never managed to get it producing enough to do 2 loaves a day, most bugs talk about cooking it up once a week. Yeah right.
There is an old way of cooking potatoes here, you cook them, mash them up with lots of water, and you leave them on the window sill for a few days to be innoculated, and then you put the muck in jars.
After much praying you pour it out when you need yeast, and hope to god it doesn't kill you. I've never had the guts to do it myself, but I've done a fair bit with sourdough. Tasty and delicious, but soooo slow to get the yeast to grow.
